Enchilladas Recipes

- Olive oil
- Yellow Onion, diced
- Red pepper
- Enchillada Sauce
- Can Diced Tomatoes
- 4 cups Mexican Cheese
- 2 Cloves Garlic
- Cumin
- Cilantro
- Either 2 Chicken Breasts or 1lb Ground Beef
- 5-6 Flour Tortillas
Instructions
- Preheat oven to 350 degrees
- Cook chicken or ground beef, add to bowl
- Set a pan to medium heat. Add olive oil
- Add red peppers and onion to pan, heat until softened
- Add Garlic, Cumin, Enchilada sauce, and diced tomatoes to pan until mixture is heated through
- Pour 1 cup of mixture into bowl, save 1 cup to pour over enchilladas, add rest to bottom of tray
- In bowl, add cooked meat, half cilantro, and 2 cups Mexican cheese. Stir until well mixed
- Add mixture into 5-6 tortillas. Place tortillas on tray and top with remaining cheese and enchillada mixture
- Bake for 10 mins
