Enchilladas Recipes

  • Olive oil
  • Yellow Onion, diced
  • Red pepper
  • Enchillada Sauce
  • Can Diced Tomatoes
  • 4 cups Mexican Cheese
  • 2 Cloves Garlic
  • Cumin
  • Cilantro
  • Either 2 Chicken Breasts or 1lb Ground Beef
  • 5-6 Flour Tortillas

Instructions

  1. Preheat oven to 350 degrees
  2. Cook chicken or ground beef, add to bowl
  3. Set a pan to medium heat. Add olive oil
  4. Add red peppers and onion to pan, heat until softened
  5. Add Garlic, Cumin, Enchilada sauce, and diced tomatoes to pan until mixture is heated through
  6. Pour 1 cup of mixture into bowl, save 1 cup to pour over enchilladas, add rest to bottom of tray
  7. In bowl, add cooked meat, half cilantro, and 2 cups Mexican cheese. Stir until well mixed
  8. Add mixture into 5-6 tortillas. Place tortillas on tray and top with remaining cheese and enchillada mixture
  9. Bake for 10 mins
